Coconut Granola Rice Krispie Treats
I'm back with a healthy recipe! Ok ok, I'll admit this isn't as healthy as the last one but it's not as unhealthy as it could be. If anyone could make something unhealthy, we all know it's me. I love snacking but I've noticed that my snacks are the unhealthy portion of my diet. So when I thought of the recipe I got very excited, because it's a good combination of healthy-ish and sweet.
I've always had a deep love for rice krispie treats, they're so simple yet so yummy. Sadly, they are not the healthiest. So to feel less guilt when I eat these I decided to add a healthy ingredient and it actually worked out really well. As mentioned in my previous healthy recipe post I love the versatility of granola and it fit so well in this recipe that my love for granola has grown. I wanted to add a little pizazz to the recipe so I picked out a granola mix that came with pizazz. I decided on a coconut chia granola with almonds, from Sweet Home Farm...it simply doesn't get healthier than that. The most difficult part of this recipe will be trying to stop yourself from eating it right out of the pot. Scroll down for this yummy recipe!
- 2 C Coconut Chia Granola
- 2 C Rice Krispies
- 4 C Mni Marshmallows
- 3 Tbs Butter
- Melt butter in large pot over medium heat
- Stir in marshmallows till they melt
- Turn off the heat and stir in granola and rice krispies
- Scoop mixture onto baking sheet lined with wax paper
- Gently press the mixture across the pan
- Let cool then slice.
